The journey began in 2003 during our travels throughout the Carolinas. It was there we discovered True Q in what is known as “The Cradle of Q” – famous for decades-old recipes, smoked in small roadside shacks by second and third generation pitmasters. We learned the low-and-slow secret to great barbecue and brought that rich tradition north to share with family and friends.
After perfecting our craft on the competition barbecue circuit, we opened our first Old Carolina Restaurant in Massillon, Ohio in 2006. Since then, we’ve expanded to 10 restaurants throughout Ohio and Pennsylvania and have been recognized as one of the Top Ten BBQ Chains in America. It’s been an amazing journey and the most important thing we’ve learned along the way is to never take shortcuts. At Old Carolina, we slow smoke our meats on-site all night, every night and we’re committed to producing authentic southern barbecue, served with genuine hospitality every day.
